Ingredients
• 4 eggs
• Sugar – 110g
• Vanilla sugar – 10g
• Flour – 120g

First we need to carefully separate the egg
whites from the yolk.
Then we need to add 50 grams of sugar
and 10 grams of vanilla sugar to 4 yolks.

Whisk yolks with sugar until
the mixture is light and
fluffy.

Now we need to whisk the egg whites. You
can add a pinch of salt or some lemon
juice. Whisk until light foam. Pour in 60
grams of sugar.

Whisk egg whites with sugar until stiff,
glossy foam. If the whites don’t fall out of
the bowl, then they are ready.

Now add half of the whites to the yolks
and mix it together with a silicone spatula.
Repeat this with the rest of the whites.

Pour the sifted flour into the mixture in
small portions in several steps, each time
mixing them with a spatula.

The dough for sponge
cake is ready.

Put the dough into a baking dish. Preheat
oven to 180-200°C. Bake the dough for
40-60 minutes.

After the time has passed, we pierce the cake with a
wooden stick, and if it is dry, the cake is ready. Let it
cool down a bit, take it out and leave it for 8-12
hours.
Finally, the sponge cake
is completely ready and
can be used in other
recipes.
